Chris Locke spent two years travelling through Mexico and Guatemala before coming to work at El Caballito. His travels through the land of the ancient Mayans allowed him to gain a greater cultural understanding of Mexican cuisine. Finding it nothing like the fast-food versions he’d encountered before, his passion for real Mexican fare grew.
Chris works under the direction of executive chef Elia Herrera, who also runs the kitchen upstairs at Los Colibris. While it is very much her direction that brought El Caballito to life, Chris’ culinary vision syncs perfectly with hers. El Caballito makes tacos with no concessions of any kind to the latest foodie fads. “We’re every conscious that everything here is as close to authentic as possible,” says Chris. “We stay true to the traditional.”
